
SuperRice Kala Namak Zarda

Ingredients:

1 cup SuperRice Kala Namak Rice (soaked for 20 minutes)

¾ cup sugar or jaggery (as preferred)

2 tbsp ghee

3–4 green cardamoms
-
1 small cinnamon stick
-
1 tbsp chopped cashews
-
1 tbsp raisins
-
1 tbsp almonds, sliced

A few strands of saffron (soaked in 2 tbsp warm milk)

2 cups water
-
A pinch of yellow or natural food color (optional)

Instructions:
Let’s get cooking 🍯
Step 1 – Prepare the Rice
Rinse and soak SuperRice Kala Namak Rice for 20 minutes.
Boil 2 cups of water with a pinch of food color and a little ghee.
Add the rice and cook till 90% done. Drain and keep aside.
Step 2 – Sweet Base
In a heavy-bottom pan, heat ghee.
Add cardamoms and cinnamon; let them release aroma.
Add sugar (or jaggery) with ¼ cup water and let it melt into a syrup.
Step 3 – Combine & Infuse
Add the cooked rice gently into the syrup.
Pour in saffron milk and mix lightly to coat every grain.
Sprinkle chopped nuts and raisins.
Step 4 – Steam to Perfection
Cover and cook on low heat for 8–10 minutes till the rice absorbs the syrup and turns glossy.
Fluff gently to separate the grains.
Step 5 – Garnish & Serve
Top with extra nuts, a drizzle of ghee, and serve warm.
