
SuperRice Kala Namak Veg Biryani

Ingredients:

1 cup SuperRice Kala Namak Rice (soaked for 20 mins)

1 ½ cups mixed vegetables (carrot, peas, beans, cauliflower, potato)

1 large onion, thinly sliced

1 medium tomato, chopped
-
2 tbsp ghee or oil
-
1 tbsp ginger-garlic paste
-
½ cup yogurt (curd)
-
Whole spices: 1 bay leaf, 3 cloves, 2 cardamoms, ½ inch cinnamon stick
-
½ tsp turmeric powder
-
1 tsp biryani masala
-
½ tsp red chili powder (optional)
-
Salt to taste

Fresh mint + coriander leaves, chopped

Saffron strands (optional) soaked in warm milk

Instructions:
Let’s get cooking 🍲
Step 1 – Prep the Rice
Rinse SuperRice Kala Namak Rice and soak it for 20 minutes.
Boil with a pinch of salt until 80% cooked. Drain and keep aside.
Step 2 – Make the Masala
Heat ghee or oil in a heavy-bottom pan.
Add whole spices and let them splutter.
Add onions and sauté till golden brown. Add ginger-garlic paste, then tomatoes.
Cook till soft and aromatic.
Step 3 – Add Veggies & Flavor
Toss in the chopped vegetables, turmeric, chili powder, and biryani masala.
Add yogurt and mix well till everything is coated.
Cook for 5–7 minutes till veggies are tender and fragrant.
Step 4 – Layer & Steam
In the same pot (or a biryani handi), spread one layer of rice, then vegetable masala, and repeat.
Top with saffron milk, mint, and coriander.
Cover tightly and cook on low flame for 10–12 minutes (or bake for 20 mins at 180°C).
Step 5 – Serve & Enjoy
